The Short List - February

February 01 - February 28

With Valentine's Day upon us, our short list includes wines that will tantalize taste buds and add a sparkle to your love's eye. One favorite this month is the Scribe 2013 Riesling. Stop right there! You saw “Riesling” and decided to skip right to the next recommendation, didn’t you? I think you are making a mistake. I guarantee this Riesling is unlike any other you have ever tasted - dry and crisp as it gets! Pair with our Crab Cake, Tuna Tartare, and Shrimp & Grits. Our second is the A.A. Badenhorst “Family Red” 2012 Syrah Blend from South Africa. This wine is his homage to the southern Rhone. Drink this with the Chop Sirloin, Grillades & Grits, and CFS, of course.

Get your tickets to join Chef Colin Shine at this year's Taste of the NFL event February 4. Enjoy food and wine pairings from top chefs around the country while mingling with Hall of Fame NFL Players and Celebrities! To top off the night, you'll enjoy a performance by The Band Perry. Chef Colin will be serving Black Angus Hanger Steak, Potatoes Confit, Mushroom Ragout, Romesco, Celery Greens.

Have family coming into town this Saturday for Thanksgiving and want to kick the wining & dining off early? Or are you looking for the perfect wine to pair with your Thanksgiving dinner? Either way, join Chris Shine at French Country Wines this Saturday from 2pm-4pm for a bite-size Thanksgiving meal and paired wines. We'll be sampling Roast Turkey Breast with Dried Cranberry & Thyme Pan Jus, Jalapeno Sage Cornbread Dressing, Green Bean Casserole and Pumpkin Pie. See you Saturday!

The Short List - November

November 01 - November 30

The Short List highlights the wines that currently excite us! This month, we're loving a 2013 Viognier bottle from K Vintners. Say it with me “Vee own Yay!” ... or “Vog ner!” in Texan. This wine shares many similarities with Chardonnay, so we like to pair them with similar foods. The primary distinction is in the beautiful floral nose of rose petal & exotic perfume with Viognier. This particular example, from vineyards in Yakima Valley grown at 1300 feet of elevation, sings of Asian pear, peaches, clove, honeydew melon, & bees wax on the palate. Pair this Crab Cakes, Chicken Pot Pie and the Fried Seafood Platter.

Soft shell crab were available fresh in May. Guests joined us for a mouth-watering Crispy Soft Shell Crab served over an Atkinson Farms Vegetable Salad and topped with a soft Poached Egg and Tasso Ham Bearnaise.

We celebrated San Jacinto Day with bite-size creations from our 130-year-old Emmett & Shine Chuckwagon! We served up contemporary cowboy cuisine in honor of the landmark battle that established Texas a sovereign nation.

We prepared some Irish classics as only our Frank's kitchen can make them - with a little Texas twist! Featuring Irish Nachos, Cottage Pie, Potato Leek Soup, our signature Jameson Wings and some great Irish Whiskey deals.
