A Tour de France: Summer Wine Dinner

Join us on June 21 to savor 6 courses paired with some outstanding wines from 4 different regions of France!

Highlights include a stellar 2010 left bank Bordeaux from Pauillac and a Chateauneuf-du-Pape that was previously rated in Wine Spectator's Top 100.

St. Patrick's Day

From the fields of Limerick where the Shine clan hails, wishing you and yours a Happy St. Patrick's Day! We prepared some Irish classics as only our Frank's kitchen can make them. Featuring Smoked Skuna Bay Salmon w/ Spinach Colcannon, Cottage Pie, Potato Leek Soup and Irish Soda Bread on the table plus beer and cocktail specials!




We'd like to celebrate the heritage and culture of our Irish roots this St. Patrick's Day with a family story. Ever noticed the photo on the left hanging in our restaurant? It is of our lovely Nana, Mary Eileen Sheehan, and Pop, Michael Joseph Shine, on their wedding day in 1925 in Kansas City, Missouri.

Pop was a young member of Na Fianna Éireann, an Irish National Youth Movement that helped the Irish Volunteers who were fighting for Ireland's Independence. Although a treaty was signed in 1921, many of the Na Fianna Éireann still feared they would be imprisoned or killed so Pop escaped Ireland in 1924. Before he left, he and Nana had been a dating couple for several years. Pop was from Athea, County Limerick and Nana was only 8 miles away in Moyvanne, County Kerry. As the story goes, they met one night at a corner dance held on the border of both counties in the middle of the two country roads which crossed.

When Pop left, he promised he would call for her. A year later, the families helped Nana get passage to the States and she and Pop were married in 1925.

Native Texan Fess Parker, known for roles as Davy Crockett & Daniel Boone in the 50s-70s, moved his family to California and with the grit and integrity indicative of his Texan roots started Fess Parker Winery. Join us for a rustic menu inspired by the characters Mr. Parker embodied.  You will enjoy 5 courses plus a champagne reception with dishes like cracked peppercorn elk tenderloin and seared dayboat scallops with peach and nectarine salsa as each wine pairing is explained by a winemaker from Fess Parker. With Valentine's Day upon us, our short list includes wines that will tantalize taste buds and add a sparkle to your love's eye. One favorite this month is the Scribe 2013 Riesling. Stop right there! You saw “Riesling” and decided to skip right to the next recommendation, didn’t you? I think you are making a mistake. I guarantee this Riesling is unlike any other you have ever tasted - dry and crisp as it gets! Pair with our Crab Cake, Tuna Tartare, and Shrimp & Grits. Our second is the A.A. Badenhorst “Family Red” 2012 Syrah Blend from South Africa. This wine is his homage to the southern Rhone. Drink this with the Chop Sirloin, Grillades & Grits, and CFS, of course.

The Short List - November

The Short List highlights the wines that currently excite us! This month, we're loving a 2013 Viognier bottle from K Vintners. Say it with me “Vee own Yay!” ... or “Vog ner!” in Texan. This wine shares many similarities with Chardonnay, so we like to pair them with similar foods. The primary distinction is in the beautiful floral nose of rose petal & exotic perfume with Viognier. This particular example, from vineyards in Yakima Valley grown at 1300 feet of elevation, sings of Asian pear, peaches, clove, honeydew melon, & bees wax on the palate. Pair this Crab Cakes, Chicken Pot Pie and the Fried Seafood Platter.
